12 Eggs, Whisked
 
1 cup Shredded Pepper Jack Cheese
 
24 Small Corn Tortillas
 
1 cup Sour Cream
 
1/2 cup Avocado, Mashed
 
1/4 cup Fresh Cilantro, Chopped
 
Pan Release Spray
Diced Ham, 16oz

Directions
1Preheat the air fryer to 375°F.
2Heat a large nonstick skillet over medium-high heat. Spray with pan release and sauté the ham until heated through and beginning to brown.
3Add in the eggs, stirring constantly, until just set.
4Fold in the shredded cheese and remove from the heat.
5On a clean work surface, lay out 6 tortillas at a time. Top each with about 2 tablespoons of the egg mixture.
6Roll to make the taquito and place in the air fryer basket seam side down.
7Continue until the basket is full in a single layer, spray generously with pan release and cook for about 6 minutes, or until crispy.
8Repeat with remaining tortillas and filling.
9While the taquitos are cooking, combine the sour cream, mashed avocado, and cilantro.
10Serve the taquitos hot with sour cream on the side.
