Preheat the oven to 375ºF.
Roll out the thawed puff pastry in a rectangle to about 12 x 12.
Using a paring knife, lightly score the pastry into three columns, leaving the center column uncut. You want the center to be wider than the outer thirds.
Spoon the apple butter down the center of the dough. Layer three slices of the ham on top of the apple butter, then half of the apples, then half of the cheese.
Repeat these steps again with the remaining ham, apples, and cheese.
Fold the cut strips of pastry over the ham and apple mixture, alternating sides, to ensure the filling is covered.
Brush the strudel with egg wash and bake for 20-25 minutes or until golden brown and melty.
Allow to rest for 10 minutes then slice and serve warm.
