2 cups Fuji Apples, Peeled & Diced
 
3 tablespoons Apple Jelly
 
1 3/4 cups All Purpose Flour
 
1/2 cup Light Brown Sugar
 
2 1/2 teaspoons Baking Powder
 
1 teaspoon Salt
 
3 teaspoons Ground Cinnamon
 
1/4 teaspoon Ground Nutmeg
 
4 tablespoons Unsalted Butter, Melted
 
2 Eggs, Whisked
 
1/2 cup Milk
 
2 cups Powdered Sugar
 
1/4 cup Meyer Lemon Juice
 
2 tablespoons Meyer Lemon Zest
 
2 quarts Oil, for Frying

Directions
1Preheat fryer to 375ºF.
2Heat a heavy skillet over medium-high heat and render the bacon until crispy. Drain on paper towels and remove all but one tablespoon of the fat from the pan.
3Add the apples to the pan and sauté until just beginning to soften. Add the apple jelly to the pan, toss to combine, and reserve.
4In a large mixing bowl, sift together the flour, brown sugar, baking powder, salt, 1½ teaspoon of the cinnamon, and nutmeg.
5Combine the wet ingredients, bacon, and apples in a separate bowl.
6Fold the wet ingredients into the dry with a rubber spatula until just combined. Do not overwork or the fritters will be tough.
7Using a scoop or large spoon, drop several fritters, about 1/4 cup of batter, into the hot oil and cook for about 4 minutes. Do not overcrowd the fryer. This will need to be done in batches.
8Carefully flip the fritters and continue cooking for another 3 minutes.
9Drain on a rack over a lined baking sheet.
10While the fritters are cooking, combine the powdered sugar, remaining cinnamon, Meyer lemon juice, and zest in a small bowl, mixing to thoroughly combine.
11When the fritters come out of the fryer, brush immediately with the glaze.
12Allow to rest for 5 minutes and serve warm.
