Heat a pan over medium-high heat and render the bacon until crispy. Drain on paper towels and reserve.
Cut the grilled corn off from the cob and place into a large glass mixing bowl.
Add the Velveeta, milk, Rotel, Hatch green chiles, and combine.
Melt on high in the microwave for four minutes, stirring halfway through, or until melted.
Fold in the bacon and transfer to a serving bowl.
Garnish with the queso fresco, fresh tomatoes, onion, and cilantro.
Serve hot with tortilla chips for dipping
