5 slices Farmland Premium Maple Thick Cut Bacon, Diced 3 Ripe Bananas 8 tablespoons Unsalted Butter, Softened 1/2 cup Light Brown Sugar 1/2 cup Granulated Sugar 2 Whole Eggs 1 1/2 cups All-Purpose Flour 1 teaspoon Baking Soda 1/2 teaspoon Pumpkin Pie Spice 1/2 teaspoon Salt 1 teaspoon Vanilla Extract 3/4 cup Walnuts, Toasted & Chopped

Directions
1Preheat the oven to 350ºF.
2Heat a skillet over medium heat and render the bacon until crispy. Drain on paper towels and reserve.
3Using a hand mixer, cream together the butter and sugars until fluffy.
4Beat in one egg at a time.
5Mash the bananas with a fork and beat into the batter.
6Sift together the dry ingredients in a mixing bowl, then slowly fold into the batter until fully incorporated.
7Fold in the walnuts and rendered bacon and transfer to a greased loaf pan.
8Bake for about one hour, or until deep golden brown and a toothpick inserted in the center comes out clean.
9Rest the bread in the pan on a baking rack for 10 minutes.
10Turn the bread out onto the racks and allow to cool to room temperature before slicing and serving.
