Pumpkin Pie Spice
1/2 teaspoon
1/2 teaspoon
Salt
1/2 teaspoon
1 teaspoon
Vanilla Extract
1 teaspoon
3/4 cup
Walnuts, Toasted & Chopped
3/4 cup

Directions


  1. Preheat the oven to 350ºF.

  2. Heat a skillet over medium heat and render the bacon until crispy. Drain on paper towels and reserve.

  3. Using a hand mixer, cream together the butter and sugars until fluffy.

  4. Beat in one egg at a time.

  5. Mash the bananas with a fork and beat into the batter.

  6. Sift together the dry ingredients in a mixing bowl, then slowly fold into the batter until fully incorporated.

  7. Fold in the walnuts and rendered bacon and transfer to a greased loaf pan.

  8. Bake for about one hour, or until deep golden brown and a toothpick inserted in the center comes out clean.

  9. Rest the bread in the pan on a baking rack for 10 minutes.

  10. Turn the bread out onto the racks and allow to cool to room temperature before slicing and serving.
