Preheat the oven to 375ºF.
Bring a large pot of salted water to a rapid boil.
Blanch the green beans until just bright green, then plunge into an ice water bath to stop the cooking.
Drain the green beans well and dry completely with a clean dish towel.
On a clean prep surface, lay out three slices of bacon with the sides overlapping and running vertically.
Repeat with remaining slices of bacon, dividing the green beans evenly over each of the groups of bacon.
Roll the beans into a tight package and place seam side down on a backing sheet fitted with a rack.
Bake for about 15 minutes or until the bacon is just crispy and brown. Top with the almonds and bake for another 3 minutes to toast.
Remove from the oven and transfer to a serving platter. Garnish with lemon zest and serve hot.
