12 ounces Farmland Premium Double Smoked Double Thick Cut Bacon 2 racks St. Louis-style pork ribs, cut into individual ribs after cooking 1 teaspoon Cayenne pepper 1 teaspoon Chili powder 1 teaspoon Black pepper 1 teaspoon Salt 3 teaspoons Garlic powder 1 cup Dark brown sugar 8 ounces Yellow mustard 1 bottle Sweet & spicy BBQ sauce of choice

Directions
1Preheat the grill or smoker to 275ºF
2Combine the cayenne pepper, chili pepper, black pepper, salt, and garlic powder into a bowl to create a dry seasoning mix. Set aside
3Lay ribs on a sheet pan. Slather mustard on the top and bottom of each rib, then rub each side with the seasoning mix, reserving a small amount
4Cut each rack of ribs into individual bones. Wrap each rib bone with a slice of bacon and place back into the pan seam side down
5Top the remaining seasoning mix over the bacon, then sprinkle brown sugar on top evenly
6Place the pan on the grill over indirect heat (Indirect method: only turn burner on one part of the grill). Let ribs smoke for 2 hours
7Check internal temperature with a meat thermometer. Pork ribs should be 145ºF in the center. Remove from the grill
8Turn grill up to 325ºF and place each rib on direct heat, grilling them until the bacon crisps. While grilling, brush ribs with the BBQ sauce
9Let meat rest for 5 minutes before serving
