2 Boneless Turkey Breast Tenderloins, 1½-pounds each

Gravy - Bacon-Wrapped Turkey Breast

 
1 stick Unsalted Butter
 
1/2 cup Yellow Onion, Minced
 
6 tablespoons All-Purpose Flour
 
3 cups Chicken Broth
 
1 tablespoon Fresh Thyme, Minced
 
1 tablespoon Fresh Rosemary, Minced
 
2 tablespoons Fresh Sage, Minced
 
2 tablespoons Fresh Parsley, Minced

Directions
1Preheat the oven to 375ºF.
2On a clean prep surface, lay out five slices of bacon with the sides overlapping and running vertically to create a rectangular shape. Create a second rectangular shape with the five remaining bacon slices.
3Remove the two turkey tenderloins from the package and pat dry with paper towels.
4Lay the turkey tenderloins wide side up on the outer edge of each bacon rectangle.
5Wrap the bacon tightly around the tenderloins and place seam side down on a baking sheet fitted with a rack.
6Bake for 45 minutes to an hour or until the bacon is crispy and the turkey has reached an internal temperature of 165ºF.
7While the turkey is cooking, heat a heavy-bottomed pot over medium heat to prepare the gravy.
8Add the butter and when melted, add the onions and sweat until tender.
9Add the flour and whisk to create a roux.
10Add the chicken broth, whisking constantly so that lumps don’t form. Bring to a simmer and stir frequently, about 20 minutes.
11Add the herbs. Stir to combine and reserve.
12When the turkey is done, remove from the oven and allow to rest for about 10 minutes before slicing.
13Slice the turkey and place on a serving platter. Serve hot with the gravy on the side.
