Heat a heavy-bottomed skillet over medium-high heat and render the bacon until crispy.
Drain the bacon on paper towels and allow to cool to room temperature.
In a large mixing bowl, combine the bacon, fire-roasted tomatoes, spinach, shallot, sour cream, mayonnaise, and cream cheese.
Allow to chill in the refrigerator for at least an hour.
Serve the dip in a bowl with the chips, assorted toasts, and vegetables on a platter.
