Preheat the oven to 350ºF.
Heat a large sauté pan over medium-high heat.
Crumble the sausage into the pan and brown, breaking up any large clumps.
Remove the sausage from the pan and drain on paper towels.
In the same pan, add the peppers, onions, and mushrooms, sautéing until tender.
Remove the vegetable mixture from the pan and allow to cool slightly.
While the vegetables and sausage are cooling, press the pie dough into a quiche or pie pan.
Whisk together the eggs and half and half.
To assemble: Spread the vegetable mixture evenly over the bottom of the quiche shell. Sprinkle the sausage over the vegetables, the cheese over the sausage, then gently pour the egg mixture over the cheese.
Bake for about 40 minutes or until the center of the quiche is set.
Remove from the oven and allow to rest for 5-10 minutes. Slice and serve warm.
