2 Sweet Onion, Diced
 
1/4 teaspoon Sugar
 
1/4 teaspoon Sea salt
 
1/4 teaspoon Ground black pepper
 
1/4 teaspoon Hot sauce
 
1/2 teaspoon Fresh thyme, chopped
 
1 cup Gruyère cheese, shredded
 
1/2 cup Sour cream
 
1/2 cup Mayonnaise
 
1 tablespoon Dry sherry
 
Pita or Pretzel chips, Baguette (cut into toast points), for dipping

Directions
1Preheat the oven to 400°F
2Cook bacon in a large skillet. Remove and place on a paper towel to cool. Once cooled, crumble the bacon
3Add sweet onion, sugar, and sea salt to bacon grease in the skillet and cook over medium-high heat for about 5 minutes. Reduce heat to medium and cook, stirring often, until onions caramelize
4Add sherry and cook for 1 minute. Stir in thyme and hot sauce. Remove from heat
5Mix together the sour cream and mayonnaise in a medium bowl. Add crumbled bacon, cheese, onion mixture, and black pepper. Mix together and transfer to a 2-cup baking dish
6Bake for 20 minutes or until golden brown on top
7Serve with the pita chips, pretzels, or toast points for dipping
