  • 6 Large eggs6
  • 2 cups Heavy cream2 cups
  • 1/2 cup Salted butter1/2 cup
  • 2 tablespoons Canola oil2 tablespoons
  • 6 cups Fresh corn kernels (approx. 8 ears)6 cups
  • 1/2 cup Sweet onion, chopped1/2 cup
  • 3 ounces Shredded sharp cheddar cheese3 ounces
  • 3 ounces Shredded sharp cheddar cheese3 ounces
  • 3 ounces Shredded Parmesan cheese3 ounces
  • 1/4 cup Fresh flat leaf parsley, chopped1/4 cup

Instructions


  1. Preheat the oven to 350ºF

  2. Mix together flour, sugar, baking powder, and salt in a small bowl. Whisk together eggs, cream, and melted butter in a medium bowl

  3. Heat the oil in a large skillet on medium heat. Add corn and sweet onion, and sauté for 5 minutes. Remove and let cool for approximately 5 minutes

  4. Stir flour and corn mixture into the egg mixture. Stir the cheeses and flat leaf parsley into the corn pudding mixture. Place the items in a 13" x 9" baking dish until set and golden brown for approximately 40 minutes
