Heat a skillet over medium-high heat and brown the sausage, breaking up any large clumps.
Drain the sausage on paper towels and reserve.
In a large pot, bring the milk, stock, and grits to a boil, whisking often.
Reduce heat to low and simmer for 15-20 minutes or until tender, whisking often.
When the grits are cooked, whisk in the butter, cheddar cheese, and pimentos. Remove the pot from the heat.
To serve, ladle the desired amount of grits in a bowl. Top with sausage and garnish with green onions.
