Cook diced Farmland Hickory Smoked Thick Cut Bacon in a large pan or skillet over medium-high heat for 5 minutes, until crispy. Drain on a paper-towel-lined plate. Set aside
Reserve 2 tablespoons of bacon fat in the skillet. Add diced brussels sprouts and cook for 8 minutes. Add garlic, and sauté for 1 minute, or until fragrant
Add heavy cream, salt, black pepper, nutmeg, and cloves. Whisk mixture together and let it simmer for 5 minutes
Turn off the heat and add parmesan and white cheddar cheese. Stir to melt
