16 ounces Farmland Diced Ham 1/4 cup Shallot, Sliced Thin 1 bunch Asparagus, Sliced Into 1-Inch Pieces 2 tablespoons Fresh Tarragon, Minced 12 Eggs, Whisked 2 cups Half and Half 1/2 teaspoon Ground Nutmeg 2 cups Smoked Gouda Cheese, Shredded 2 Pie Crusts 16 ounces Arugula 1/4 cup Extra Virgin Olive Oil 2 tablespoons Fresh Lemon Juice

Directions
1Preheat the oven to 375°F.
2Heat a large nonstick skillet over medium-high heat. Spray with pan release and sauté the ham until heated through and beginning to brown.
3Add the asparagus, shallots, and tarragon to the pan and sauté until just beginning to soften.
4Transfer the ham and asparagus to a baking sheet and let cool completely.
5While the ham mixture is cooling, whisk together the eggs, half and half, nutmeg, and gouda.
6Press the pie crusts into two quiche pans.
7Divide the ham mixture between the two crusts and pour half the egg mixture over each.
8Transfer to the oven and bake for about 30 minutes, or until the centers are set and not jiggling.
9Remove from the oven and allow to rest for about 5 minutes.
10Dress the arugula with the extra virgin olive oil and lemon juice.
11Slice the quiches into 6 slices and serve with some of the salad on the side.
