Heat the sesame oil in a large skillet or wok over medium heat until melted
Add the peas, carrots, onions, garlic, and ham, and sauté until tender. Then add the cooked rice, teriyaki and soy sauce, and stir well until combined
Push rice mixture to the side. Add the eggs to the pan and use a spatula to scramble, breaking them up into small bits. Toss the egg and the rice mixture together
Continue sautéing to fry the rice until browned at the bottom, stirring occasionally
Serve immediately and top with green onions, if desired
