12 ounces Farmland Premium Doubled Smoked Double Thick Cut Bacon, Diced
 
8 cups Prepared Mashed Potatoes
 
1 cup Sour Cream
 
3 Eggs, Whisked
 
3 cups Shredded Cheddar Cheese
 
1 cup Canned Potato Sticks
 
1/2 cup Scallions, Sliced Thin

Directions
1Preheat the oven to 375ºF.
2Heat a heavy-bottomed skillet over medium heat and render the bacon until crispy.
3Drain on paper towels and reserve.
4In a large mixing bowl, combine the mashed potatoes, sour cream, and eggs.
5When fully combined, transfer half of the mixture to a greased baking dish.
6Sprinkle half of the bacon and half of the cheese on top of the mashed potato mixture, then top with the remaining mashed potatoes.
7Top with the remaining cheese and bacon, then top with the potato sticks and bake for about 20 minutes or until heated through and bubbly.
8Remove from the oven and top with the scallions. Serve hot.
