Preheat the oven to 375ºF.
Heat a heavy-bottomed skillet over medium heat and render the bacon until crispy.
Drain on paper towels and reserve.
In a large mixing bowl, combine the mashed potatoes, sour cream, and eggs.
When fully combined, transfer half of the mixture to a greased baking dish.
Sprinkle half of the bacon and half of the cheese on top of the mashed potato mixture, then top with the remaining mashed potatoes.
Top with the remaining cheese and bacon, then top with the potato sticks and bake for about 20 minutes or until heated through and bubbly.
Remove from the oven and top with the scallions. Serve hot.
