Midwestern Egg White & Sausage Cups

Directions

1. Preheat oven to 350°.

2. Spray a muffin pan evenly with non-stick cooking spray.

3. Cook one cup of sausage until brown, drain, and set aside.

4. In a mixing bowl, add egg whites, cheese, sausage, peppers, and scallions.

5. Fill each muffin tin with 3/4 of the mixture.

6. Bake for 15-20 minutes or until firm.

7. Cool for 5 minutes and remove from the muffin pan.
