Heat a heavy-bottomed pan over medium-high heat and render the bacon until crispy.
Drain off the fat and add the eggs, stirring constantly, until cooked through.
Heat a griddle to medium high.
Whisk together the pancake mix and water. The batter should be slightly thin.
Ladle 3/4 cup of the batter onto the griddle to make 6 pancakes (you may need to do this in batches).
Cook for about 3 minutes per side, or until deep golden brown.
While the pancakes are cooking, whisk together the sriracha, syrup, and cilantro, and reserve.
To serve, scoop some of the bacon and egg mixture onto each of the pancakes. Top with some of the cheese, drizzle with the syrup, and fold in half to make a taco.
Serve hot.
