3 cups Jasmine Rice, cooked
 
3 cups Red Cabbage, shredded
 
3 cups Green Cabbage, shredded
 
18 ounces Bean Sprouts
 
2 tablespoons Fresh Cilantro, minced
 
1 bunch Scallions, sliced
 
8 ounces Egg Roll Wrappers
 
1/4 cup Chinese Hot Mustard
 
1/4 cup Sweet Chili Sauce
 
1/4 cup Rice Vinegar
 
1 cup Extra Virgin Olive Oil

Directions
1Heat a heavy-bottomed pot with about 6 inches of oil to 350ºF.
2Heat a large skillet over medium-high heat and brown the ground pork, breaking up any large clumps that form, and reserve.
3In a mixing bowl, whisk together the hot mustard, chili sauce, rice vinegar, and extra virgin olive oil, and reserve.
4Cut the egg roll wrappers into quarters, separate the triangles and fry, stirring often, until crispy and golden brown. Drain on paper towels and reserve.
5To serve: Toss the cabbages, bean sprouts, cilantro, and scallions in the vinaigrette. Divide the rice between bowls, top with 1/6 of the ground pork, 1/6 of the cabbage mixture, and garnish with the egg roll chips.
