Ingredients
- 8 ounces Farmland Diced Ham8 ounces
- 6 pounds Sweet potatoes, peeled & cut into cubes6 pounds
- 2 cups Candied pecans, crushed 2 cups
- 1/4 cup Olive oil1/4 cup
- 1/4 cup Bourbon1/4 cup
- 2 tablespoons Butter2 tablespoons
- 1/4 cup Cinnamon1/4 cup
- 1/4 cup Sugar 1/4 cup
- 1/4 cup Maple syrup1/4 cup
Instructions
Preheat the oven to 425ºF
Cube and wash the sweet potatoes into ¼ inch pieces. Place onto a baking sheet and drizzle with olive oil
Roast the potatoes for 30 minutes until tender and brown
Combine all the ingredients except for the ham and candied pecans in a food processor and mix together, then spread in a 13 x 9 baking dish
Sauté the diced ham and candied pecans for 2 to 3 minutes and top in the baking dish
Bake for 20 minutes at 350ºF
