4 Cube Steaks, 8-ounce
 
1 cup All-Purpose Flour
 
1 cup Yellow Onion, Diced
 
1 cup Green Bell Pepper, Diced
 
2 tablespoons Fresh Garlic, Minced
 
1/2 cup White Wine
 
28 ounces Crushed Tomatoes
 
14 ounces Tomato Sauce
 
2 tablespoons Fresh Thyme, Minced
 
4 Bay Leaves
 
1 cup Beef Stock
 
16 ounces Egg Noodles
 
4 tablespoons Unsalted Butter
 
3 tablespoons Flat Leaf Parsley, Chopped

Directions
1Preheat the oven to 400ºF.
2Heat a large heavy Dutch oven over medium-high heat and render the bacon until crispy.
3Remove the bacon from the pan and drain on paper towels.
4While the bacon is cooking, dredge each of the cube steaks in the flour and pat off any excess.
5Fry the steaks in the Dutch oven for about 3 minutes per side, or until golden brown.
6Remove the steaks from the Dutch oven and add the onion, bell pepper, and garlic. Sauté until translucent.
7Add the bacon back to the pan and deglaze with the white wine.
8Add the tomatoes, tomato sauce, bay leaves, thyme, and beef stock and bring to a simmer.
9Add the steaks to the pan, cover, and transfer to the oven.
10Braise for about 1 hour or until the steaks are fork tender.
11At the 45 minute point, bring a large stock pot of water to a boil and cook the noodles according to package instructions. Drain and return to the pot.
12Stir in the butter and parsley, and reserve.
13To serve: Place some of the noodles in the center of a plate. Top with one of the steaks and some of the sauce. Serve hot.
