16 ounces Farmland Taco Style Seasoned Ground Pork 3 pounds Frozen Tater Tots 1/2 cup Tomato Juice 3 pounds Velveeta 14 ounces Rotel 3/4 cup Milk 1 cup Tomatoes, diced 1 cup Sweet Onion, diced 1/4 cup Fresh Jalapeños, diced 2 tablespoons Fresh Cilantro, minced 2 tablespoons Lime Juice, freshly squeezed 1/2 cup Sour Cream
Directions
1Prepare the tater tots according to package instructions and hold warm.
2While the tots are cooking, brown the ground pork over medium-high heat, add the tomato juice, and hold warm.
3Cut the Velveeta into chunks and place in a microwave-safe bowl. Add the Rotel and milk, and microwave on high for 6 minutes, stirring halfway through. Hold warm.
4 Combine the diced tomatoes, onion, jalapeños, cilantro, and lime juice in a small mixing bowl, and reserve.
5To serve: Keep the tater tots on the baking sheet, top with a generous amount of queso, ground pork, pico de gallo, and a few dollops of sour cream. Serve hot.
