Preheat the oven to 375ºF.
Using a sharp paring knife, make a slit lengthwise along one side of each date and remove the pits from each.
In a small mixing bowl, combine the goat cheese and tarragon.
Cut each slice of bacon in half and place on a lined baking sheet.
Spoon a small amount of the goat cheese mixture into each of the dates, place one on each piece of bacon.
Roll the bacon around each date and secure with a toothpick.
Bake on the lined baking sheet for about 15 minutes, or until the bacon is crispy.
Remove from the heat and drizzle with the hot honey. Serve warm.
