Preheat the oven to 350ºF.
Heat a large Dutch oven over medium-high heat. Add the sausage, browning well and breaking up any large clumps.
Add the onion and sauté until translucent.
Whisk in the flour, and cook for 3-4 minutes, stirring constantly.
Whisk in the milk and sage, stirring constantly, and bring to a simmer.
Cook the gravy, stirring often, for about 10 minutes.
While the gravy is cooking, dice the bacon and render until crispy, and drain on paper towels.
To assemble: Place a small amount of the gravy in the bottom of a 9x13 glass baking dish. Layer three of the lasagna noodles on top of the gravy, top with 1/3 of the remaining gravy, then 1/3 of the rendered bacon, and 1/4 cup of the shredded cheese.
Repeat the process two more times, pour the eggs over the lasagna, then top with the remaining cheddar cheese.
Bake for 45 minutes or until melty and just beginning to brown.
Allow to rest for 5 minutes and serve hot.
