Bacon and Maple Glaze
For the donuts: Preheat the oven to 375ºF.
Sift together the dry ingredients.
Whisk together the wet ingredients.
Gently add the wet ingredients to the dry, stirring until just combined.
Spoon some of the mixture into greased donut molds, filling to about 3/4 full.
Bake for about 15 minutes, or until golden brown and a toothpick inserted comes out clean.
Transfer the pans to a baking rack to cool for about 5 minutes, then turn the donuts out of the pan onto the rack to cool completely.
For the maple glaze: Render the bacon over medium-high heat until crispy. Drain on paper towels and reserve. Once cooled, dice the bacon into small pieces. Combine the sugar, syrup, extract, and salt in a mixing bowl. Add the milk bit by bit, stirring constantly until desired consistency is reached. Dip each donut in the glaze and return to the rack to set. Garnish each donut with the bacon and serve immediately.
