Rhubarb (fresh or frozen), chopped
2 cups
1/2 cup
Onion, finely diced
1/2 cup
2 cloves
Garlic, minced
2 cloves
1 tablespoon
Fresh ginger, peeled & minced
1 tablespoon
1 teaspoon
Ground allspice
1 teaspoon
1/4 teaspoon
Ground cinnamon
1/4 teaspoon
1 cup
BBQ Sauce
1 cup

Directions


  1. Place a large saucepan over medium heat

  2. Cook bacon for 5-7 minutes or until lightly browned and crisp

  3. Transfer the bacon to a plate and remove all but 2 tablespoons of bacon fat from the saucepan

  4. Stir bacon, rhubarb, onion, garlic, ginger, allspice, and cinnamon into a saucepan over medium heat and cook for 5 minutes or until veggies are softened

  5. Stir in BBQ sauce and bring to a simmer

  6. Reduce heat to medium low and continue cooking, stirring occasionally, about 15 minutes or until thick

  7. Cool completely before placing in a small mason jar and store in the refrigerator
