Preheat the oven to 400º F
Generously coat both sides of the bacon slices with brown sugar
Place the brown sugar-coated bacon onto a cooling rack with nonstick cooking spray. Lay the cooling rack over an aluminum foil-lined baking sheet
Cook the bacon for about 15-20 minutes until it looks caramelized and firm, keeping a close watch so it doesn’t burn
Let bacon cool slightly until it no longer sticks and remove from the cooling rack. Place on a piece of parchment paper and allow to cool further
Gently and slowly add the sweetened condensed milk, bourbon, vanilla extract, maple extract, and heavy whipping cream to the ice cream maker. Follow the instructions with your maker as they can vary depending on the manufacturer
Chop candied bacon and sprinkle over the top of the ice cream. Freeze according to the directions provided
Once frozen, drizzle with the maple syrup, garnish with more bacon, and serve
