All-purpose flour, for breading

Honey mustard sauce, for dipping
Neutral oil, for frying

Honey Mustard Sauce:

2 ounces
Honey

1 teaspoon

1 teaspoon

Directions


  1. Preheat a cast iron skillet on medium heat and melt the butter and olive oil in a heavy pan. Add the onions and sauté for about five minutes

  2. Add the nutmeg and salt. Mix in the diced ham and cook for no more than a minute. Add the flour and sauté, stirring constantly to incorporate flour as much as possible without burning it. Once browned, slowly add the milk

  3. Continue adding the milk, little by little, over the next 15-20 minutes. If the dough mixture gets dry, add more milk, stirring constantly until it reaches a thick, creamy consistency

  4. Place croquette dough into a large bowl and let it cool to room temperature. Once cooled, put plastic wrap directly on the dough and refrigerate at least four hours (ideally overnight)

  5. Once dough is completely chilled, portion croquettes with a small ice cream scoop and shape them into logs

  6. Using a large pot, preheat the oil to 350°F. Bread croquettes with flour, eggs. and breadcrumbs. Fry for 3-5 minutes or until golden brown

  7. Honey Mustard Sauce: Mix honey, mustard, and black pepper together and whisk. Serve on the side with Ham Croquettes.
