Ham Croquettes

1 package Farmland Diced Ham
 
4 tablespoons Butter
 
1/4 cup Olive oil
 
1 cup All-purpose flour
 
1 Medium onion, finely diced, 1
 
4 cups Whole milk, at room temperature
 
1 teaspoon Nutmeg
 
1 teaspoon Salt
 
All-purpose flour, for breading
 
2 eggs
 
8 ounces Panko breadcrumbs
 
Honey mustard sauce, for dipping
 
Neutral oil, for frying

Honey Mustard Sauce:

 
2 ounces Honey
 
ounces Yellow mustard
 
1 teaspoon Black pepper

Directions
1Preheat a cast iron skillet on medium heat and melt the butter and olive oil in a heavy pan. Add the onions and sauté for about five minutes
2Add the nutmeg and salt. Mix in the diced ham and cook for no more than a minute. Add the flour and sauté, stirring constantly to incorporate flour as much as possible without burning it. Once browned, slowly add the milk
3Continue adding the milk, little by little, over the next 15-20 minutes. If the dough mixture gets dry, add more milk, stirring constantly until it reaches a thick, creamy consistency
4Place croquette dough into a large bowl and let it cool to room temperature. Once cooled, put plastic wrap directly on the dough and refrigerate at least four hours (ideally overnight)
5Once dough is completely chilled, portion croquettes with a small ice cream scoop and shape them into logs
6Using a large pot, preheat the oil to 350°F. Bread croquettes with flour, eggs. and breadcrumbs. Fry for 3-5 minutes or until golden brown
7Honey Mustard Sauce: Mix honey, mustard, and black pepper together and whisk. Serve on the side with Ham Croquettes.
