4 Farmland Ham Steaks 1 cup All-purpose flour 1/4 cup Cornstarch 1 tablespoon Baking powder 2 teaspoons Espresso 2 teaspoons Paprika 1/4 teaspoon Black pepper, coarsely ground 1 cup Whole milk 1/2 cup Buttermilk 2 Eggs 2 ounces Marsala wine 3/4 cup Chicken broth 1/2 cup Brewed coffee 1/2 cup Whole milk 2 tablespoons Buttermilk 3 tablespoons Butter 3 tablespoons Flour 2 teaspoons Maple syrup 1 1/2 - 2 teaspoons Hot sauce 1/2 teaspoon Kosher salt 1/2 teaspoon Black pepper, coarsely ground Kosher salt, for seasoning 1 pound Bucatini pasta 2 tablespoons Chives or Scallions, thinly sliced

Directions
1Marsala Sauce: Mix broth, coffee, milk, and buttermilk together
2Melt the butter in a small skillet over medium heat. Sprinkle flour over butter in batches, whisking slowly to ensure there are no lumps
3Cook for another minute or two, but do not allow the sauce to color
4Slowly pour coffee, milk, and buttermilk mixture into roux while whisking
5Once incorporated and smooth, continue to cook until mixture has thickened enough to coat the back of a spoon
6Add remaining ingredients and taste
7 If the sauce is too thick, add more milk until it reaches desired consistency. Set aside and keep warm
8Ham Steaks: Mix the dry ingredients and place into a pan
9Whisk the wet ingredients together and place in another pan. Heat oil in a 12" cast iron pan to 375℉ for shallow frying
10Coat the first ham steak evenly with flour mix on each side, shaking off any excess
11Place in egg mixture, coating both sides completely
12Repeat flour and egg coating steps with the remaining ham steaks.
13Place ham steaks into hot oil and fry evenly, approximately 3 minutes on each side or until the internal temperature reaches 165°–175℉
14Season ham steaks with kosher salt and drain on a paper towel or rack
15Prepare the bucatini pasta according to package directions
16Place ham steaks over the bucatini noodles, top with Marsala sauce and garnish with chives or scallions
