Chicken, we love you, but variety is the spice of life and this Ham Steak Marsala is delicious proof—tender ham steaks dipped in a perky espresso-laced coating fried until golden brown. Place the ham steaks on a bed of bucatini pasta, top with a rich, fragrant Marsala wine sauce, and you’ve got a meal ready to strut its stuff!

Buttermilk

Marsala Sauce

2 ounces
Marsala wine
2 ounces
3/4 cup
Chicken broth
3/4 cup
1/2 cup
Brewed coffee
1/2 cup
1/2 cup
Whole milk
1/2 cup
2 tablespoons
Buttermilk
2 tablespoons
3 tablespoons
Butter
3 tablespoons
3 tablespoons
Flour
3 tablespoons
2 teaspoons
Maple syrup
2 teaspoons
1 1/2 - 2 teaspoons
Hot sauce
1 1/2 - 2 teaspoons
1/2 teaspoon
Kosher salt
1/2 teaspoon
1/2 teaspoon
Black pepper, coarsely ground
1/2 teaspoon

To Serve:

Kosher salt, for seasoning
1 pound
Bucatini pasta
1 pound
2 tablespoons
Chives or Scallions, thinly sliced
2 tablespoons

Directions


  1. Marsala Sauce: Mix broth, coffee, milk, and buttermilk together

  2. Melt the butter in a small skillet over medium heat. Sprinkle flour over butter in batches, whisking slowly to ensure there are no lumps

  3. Cook for another minute or two, but do not allow the sauce to color

  4. Slowly pour coffee, milk, and buttermilk mixture into roux while whisking

  5. Once incorporated and smooth, continue to cook until mixture has thickened enough to coat the back of a spoon

  6. Add remaining ingredients and taste

  7. If the sauce is too thick, add more milk until it reaches desired consistency. Set aside and keep warm

  8. Ham Steaks: Mix the dry ingredients and place into a pan

  9. Whisk the wet ingredients together and place in another pan. Heat oil in a 12" cast iron pan to 375℉ for shallow frying

  10. Coat the first ham steak evenly with flour mix on each side, shaking off any excess

  11. Place in egg mixture, coating both sides completely

  12. Repeat flour and egg coating steps with the remaining ham steaks.

  13. Place ham steaks into hot oil and fry evenly, approximately 3 minutes on each side or until the internal temperature reaches 165°–175℉

  14. Season ham steaks with kosher salt and drain on a paper towel or rack

  15. Prepare the bucatini pasta according to package directions

  16. Place ham steaks over the bucatini noodles, top with Marsala sauce and garnish with chives or scallions
