In a medium-sized bowl, toss scallops with kosher salt, black pepper, and olive oil to coat
Preheat a gas grill to 425˚F. Once the grill reaches temperature, turn off burners in one area to create an indirect heat zone. Arrange bacon strips on the indirect heat area of the preheated grill. Cook with the lid open, 5 to 6 minutes. Transfer partially-cooked bacon to a clean plate. Turn burners back on, close the grill lid, and reheat the grill to 425˚F
Wrap one slice or half a slice of bacon (depending on the scallop size) around the raw scallop and thread onto a metal or bamboo skewer. If using a bamboo skewer, soak it in water for 15 minutes before
Lightly brush grill grates with oil and place the skewered bacon scallops on the grill. Cook for 6-8 minutes (3-4 minutes per side) until scallops are just cooked through and bacon is crispy
Remove from the grill and serve with lemon wedges, if desired
