Maple Bacon Coffee Cake

Directions
Preheat the oven to 350°F
Cream together butter, sugar, vanilla, and eggs with an electric mixer
In a separate bowl, sift flour, salt, baking powder, and baking soda
Put half of the flour mixture into the butter and stir
Pour the buttermilk into the batter and mix for about one minute, then add the rest of the flour mixture
Mix until all ingredients are combined, making sure to clean down the sides of the bowl with a spatula
Pour into a well-oiled 9-inch pan
To prepare the crumble, melt butter then add the flour, brown sugar, and cinnamon
Mix with your hands until it forms a crumble
Sprinkle on top of the coffee cake and place in the oven
Bake for 45-50 minutes or until a toothpick comes out clean in the center
While the cake bakes, cut the slices of bacon into ½-inch pieces and cook in a small pan over medium heat until the slices are cooked evenly. Place bacon on a paper towel and set aside for garnish
To prepare the drizzle, combine the powdered sugar, brewed coffee, melted butter and maple extract together and set aside
Once the cake has cooled, place a plate over the cake pan and flip it, removing the cake from the pan. Take another plate and flip the cake back to its upright position with the crumble on top
Place bacon pieces on top of the cake and generously drizzle maple icing on top
